Water activity, generally expressed as aw, indicates how much water in a product is available to participate in chemical reactions or support microbial growth. It should not be confused with total moisture content: two products with similar moisture levels can have very different aw values. Measuring water activity is therefore an important tool for evaluating the stability and storage characteristics of many products.

Why is water activity measured in food products?

Water availability influences the growth of bacteria, yeasts and molds, as well as several reactions that can affect product quality. Measuring aw can therefore help manufacturers monitor processes, verify consistency between batches and better evaluate conditions that influence food stability and shelf life. Water activity meters can be used with many solid, semi-solid and liquid products, including baked goods, meats, cheeses, powders, cereals, confectionery products, ingredients and dried foods. They can also be used in other applications where water availability is an important parameter for product quality or stability.

Why is temperature important when measuring water activity?

Water activity is temperature-dependent. To obtain comparable and reproducible results, samples and instruments should therefore be used under appropriate and sufficiently stable temperature conditions. Some water activity meters incorporate temperature monitoring or control to improve measurement reproducibility.

How can you verify that a water activity meter is providing reliable measurements?

Use certified or known-value humidity standards to check and, depending on the instrument, adjust a water activity meter at different measurement points. Regular verification with appropriate standards helps confirm instrument performance and maintain reliable results over time.
